Season the Pork
Rub the pork shoulder with salt and black pepper evenly on all sides. Set aside.

Prepare the Sauce
In a bowl, combine minced garlic, chopped shallots, chopped red chili, grated ginger, turmeric powder, coriander powder, and cumin powder. Mix well.

Cook the Sauce
In a large pan over medium heat, add the mixture and sauté for about 5 minutes until fragrant. Add soy sauce, coconut milk, brown sugar, and lime juice. Stir well and let simmer for another 5 minutes.

Combine Pork and Sauce
Place the seasoned pork shoulder in a slow cooker. Pour the prepared Indonesian sauce over the pork, ensuring it is well coated.

Cover the slow cooker and cook on low for 8 hours or until the pork is tender and easily shredded.
Serving

Garnish and Serve
Once cooked, shred the pork using two forks. Serve hot, garnished with chopped cilantro and lime wedges on the side.
