Preparing the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Mix well. Place the salmon fillets in the marinade and ensure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (around 375°F to 400°F or 190°C to 200°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Salmon

    Remove the salmon from the marinade and discard the leftover marinade. Place the fillets skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon is cooked through and has grill marks.

Preparing the Seasonal Vegetables

    Prepare the Vegetables

    Wash and trim the asparagus. Cut the bell peppers into strips and slice the zucchini into rounds.

    Season the Vegetables

    In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper until well coated.

    Grill the Vegetables

    On a separate part of the grill or in a grill basket, add the seasoned vegetables. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Plating

    Once both the salmon and vegetables are done grilling, plate the salmon fillets alongside the grilled seasonal vegetables. Serve immediately and enjoy!
