Preparing the Pork Belly

    Score the Pork Belly

    Using a sharp knife, carefully score the skin of the pork belly in a crosshatch pattern, making sure not to cut too deeply into the meat.

    Season the Pork

    Rub the pork belly all over with salt, black pepper, garlic powder, and baking powder. Ensure the mixture gets into the scored areas. Let it rest uncovered in the refrigerator for at least 4 hours, preferably overnight.

Cooking the Pork Belly

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Bake the Pork Belly

    Place the pork belly on a baking tray lined with parchment paper, skin side up. Bake in the preheated oven for 2 to 2.5 hours until tender.

    Crisp the Skin

    After baking, increase the oven temperature to 450°F (230°C) and roast for an additional 30-40 minutes, or until the skin is crispy and golden brown.

Making the Sweet and Spicy Sauce

    Combine Ingredients

    In a small saucepan, combine honey, soy sauce, Sriracha sauce, rice vinegar, minced ginger, and minced garlic.

    Simmer the Sauce

    Bring the mixture to a gentle simmer over medium heat. Cook for about 5-7 minutes, stirring occasionally, until slightly thickened.

    Adjust to Taste

    Taste the sauce and adjust seasoning if necessary. You can add more Sriracha for extra spice or more honey for sweetness.
