Method

Turkey Preparation

    Prepare the Turkey

    Preheat your oven to 325°F (165°C). Rinse the turkey under cold water and pat it dry with paper towels. Rub the entire turkey with olive oil, ensuring it's evenly coated.

    Season the Turkey

    In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and dried thyme. Rub this seasoning mixture all over the turkey, including under the skin.

    Roast the Turkey

    Place the turkey on a roasting rack in a roasting pan. Roast in the preheated oven for about 3-4 hours, or until the internal temperature reaches 165°F (75°C). Baste the turkey every hour with the drippings.

    Rest the Turkey

    Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before pulling the meat apart.

Coleslaw Preparation

    Prepare the Coleslaw

    In a large bowl, combine shredded cabbage and shredded carrots.

    Mix the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Combine and Chill

    Pour the dressing over the cabbage and carrots. Toss until everything is well coated. Cover and refrigerate for at least 1 hour before serving.

Assembly

    Prepare the Rolls

    Slice the sandwich rolls in half and lightly toast them if desired.

    Assemble the Sandwich

    Spread a thin layer of mayo on the inside of each roll. Layer with pulled turkey, a slice of provolone cheese, a generous scoop of coleslaw, and a drizzle of Russian dressing.

    Serve

    Place the top half of the roll on each sandwich and serve immediately.
