Preparation Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust them with cocoa powder. Tap out any excess cocoa powder and set aside.

  3. 3

    Melt Butter and Chocolate

In a medium saucepan over low heat, melt the unsalted butter and bittersweet chocolate together, stirring frequently until smooth. Remove from heat and let cool slightly.

  4. 4

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly thickened.

  5. 5

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to avoid cooking the eggs.

  6. 6

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and salt, then fold gently until just combined. Be careful not to overmix.

  7. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.

  8. 8

    Bake the Cakes

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft and slightly jiggly.

  9. 9

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off to release the cake. Serve immediately, optionally with ice cream or whipped cream.
