Prepare the Bread
Preheat the oven to 350°F (175°C). Spread stale bread cubes on a baking sheet and toast in the oven for about 10-15 minutes until lightly golden. Remove from oven and let cool.

Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add the diced onion and celery. Sauté for about 5-7 minutes until the onion is translucent and the celery is tender.

Combine Ingredients
In a large mixing bowl, combine the toasted bread cubes, sautéed onion and celery, dried sage, dried thyme, salt, and black pepper. Mix well to ensure the bread is evenly coated with the herb mixture.

Add Broth and Eggs
Gradually pour in the vegetable broth and add the beaten eggs to the mixture. Stir until all the bread cubes are moistened. Fold in the chopped parsley.

Transfer the stuffing mixture into a greased baking dish. Spread it evenly and press down gently to ensure it holds together.
