Shred the Cabbage
Remove the outer leaves of the green and red cabbage, then cut them in half and remove the core. Using a sharp knife or a mandoline slicer, shred the cabbage into thin strips.

Grate the Carrots
Peel the carrots and use a box grater or food processor to grate them into fine pieces.

Combine Vegetables
In a large mixing bowl, combine the shredded green cabbage, red cabbage, and grated carrots. Toss them together until well mixed.

In a separate bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, black pepper, and celery seeds. Whisk together until smooth and well combined.

Combine Vegetables and Dressing
Pour the dressing over the bowl of mixed vegetables. Toss everything together until the vegetables are evenly coated with the dressing.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
