Prepare the Ingredients

    Chop the Lettuce

    Wash and dry the lettuce leaves. Chop them into bite-sized pieces and place them in a large salad bowl.

    Prepare the Tomatoes

    Wash the tomatoes, remove the stems, and dice them into small pieces. Add them to the bowl with the lettuce.

    Slice Cheese and Meats

    Cut the provolone cheese into small cubes. Thinly slice the salami, capicola, and prosciuttini. Add all the sliced meats and cheese to the salad bowl.

    Add Olives

    Slice the black olives in half (if whole) and add them to the salad bowl.

Make the Dressing

    Combine the Dressing Ingredients

    In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, minced garlic, salt, and black pepper until well combined.

    Taste and Adjust

    Taste the dressing and adjust the seasoning with more salt and pepper as needed.

Assemble the Salad

    Pour the dressing over the salad ingredients in the bowl. Toss gently to combine everything evenly.
