Preparation of Chicken
- 1
Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper to taste. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- 2
Add BBQ Sauce
In the last few minutes of grilling, brush the BBQ sauce over the chicken breasts. Allow it to caramelize slightly for an additional 2-3 minutes.
- 3
Rest the Chicken
Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
Assembling the Party Tray
- 4
Prepare the Salad Base
In a large serving tray or bowl, layer the mixed greens as the base.
- 5
Add Vegetables
Evenly distribute the diced tomatoes, corn, and black beans over the mixed greens.
- 6
Add Grilled Chicken
Place the sliced BBQ chicken on top of the salad.
- 7
Top with Crispy Onions
Sprinkle the crispy cheddar onions over the chicken and salad for added crunch.
- 8
Serve with Dressing
Serve the chipotle ranch dressing on the side or drizzle it over the top just before serving.
