Preparing the Chicken

In a bowl, combine olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat them well with the marinade. Let them marinate for at least 30 minutes.

Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until they reach an internal temperature of 165°F. Remove from the grill and let them rest for 5 minutes before slicing.

In a large bowl, combine mixed greens, halved cherry tomatoes, and diced cucumber. Toss lightly to mix.

On a large serving platter, spread the salad base evenly. Top with sliced grilled chicken, gorgonzola cheese crumbles, and glazed cranberry walnuts.

In a jar, combine balsamic vinegar, honey, Dijon mustard, and olive oil. Shake well until emulsified. Season with salt and black pepper to taste.
