Preheat the Oven
Preheat your oven to 250°F (120°C).

Season the Roast
In a small bowl, mix together the kosher salt, black pepper, garlic powder, and onion powder. Rub the mixture all over the American Wagyu beef roast, ensuring it is evenly coated.

Roast the Beef
Place the seasoned Wagyu roast in a roasting pan. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven for about 2-3 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest the Beef
Remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for 20-30 minutes to allow the juices to redistribute.

Slice the Roast
After resting, slice the roast thinly against the grain.

Prepare the Sandwich
On each sandwich roll, layer the sliced Wagyu beef, followed by 2 slices of provolone cheese, lettuce, tomato slices, and onion slices. Spread mayonnaise on the top half of the roll.
