    Prepare the Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced breakfast potatoes, season with salt and pepper, and cook until golden and crispy, about 10-15 minutes, stirring occasionally.

    Cook the Chorizo

    In the same skillet, push the potatoes to one side and add the chorizo. Cook until browned and cooked through, about 5-7 minutes. Mix with the potatoes and set aside.

    Cook the Eggs

    In another skillet, heat the remaining tablespoon of olive oil over medium heat. Crack in the eggs and cook to your desired style (scrambled, sunny-side-up, etc.). Season with salt and pepper.

    Assemble the Hash

    Place the potato and chorizo mixture on a plate. Top with cooked eggs, crumbled cojita cheese, a dollop of sour cream, and fresh guacamole.

    Serve

    Warm the corn tortillas in a dry skillet or microwave. Serve alongside the hash for a complete meal.
