Ravioli Preparation

    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center, and crack the eggs into the well. Gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped basil, salt, and pepper. Mix until well combined.

    Roll Out the Dough

    Divide the dough into four pieces. Roll out one piece at a time into thin sheets, about 1/16 inch thick.

    Form the Ravioli

    Place small spoonfuls of the filling onto one sheet of dough, leaving space between each. Cover with another sheet of dough, pressing around the filling to seal. Cut into squares or circles.
