Cooking Directions

  1. 1

    Prepare the Crab Stuffing

In a bowl, mix crab meat, cream cheese, salt, and black pepper until well combined.

  2. 2

    Stuff the Salmon

Make a pocket in each salmon fillet and stuff with the crab mixture. Secure with toothpicks if necessary.

  3. 3

    Cook the Salmon

Heat olive oil in a frying pan over medium heat. Cook the salmon for 4-5 minutes on each side, or until cooked through.

  4. 4

    Prepare the Broccolini

In a separate pot, blanch broccolini in boiling water for 2-3 minutes, then transfer to ice water to maintain color.

  5. 5

    Make the Hollandaise Sauce

Melt butter in a saucepan. In a bowl, whisk egg yolks, lemon juice, and water. Gradually add melted butter while whisking until thickened. Season with salt.

  6. 6

    Prepare the Cauliflower Rice

Sauté cauliflower rice in a pan with olive oil, salt, and pepper for about 5 minutes until tender.

  7. 7

    Assemble the Dish

On a plate, create a bed of cauliflower rice, place the stuffed salmon on top, layer with broccolini, and drizzle with hollandaise sauce.
