Portobello Mushroom Sandwich

Preparation and Assembly

Marinate the Vegetables
In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper. Add Portobello mushrooms, sliced zucchini, chopped tomato, and sliced bell pepper. Toss to coat and let marinate for at least 30 minutes.

Grill the Vegetables
Preheat a grill or grill pan over medium-high heat. Remove the vegetables from the marinade (reserve the marinade) and grill the Portobello mushrooms for about 5-7 minutes per side until tender. Grill the zucchini, tomato, and bell pepper for about 3-4 minutes until they are charred and tender.

Assemble the Sandwich
Toast the brioche buns on the grill for 1-2 minutes until golden. Layer the grilled Portobello mushroom on the bottom half of the bun, followed by the zucchini, tomato, and bell pepper. Drizzle a little of the reserved marinade over the top before adding the top half of the bun.

Serve the Portobello mushroom sandwich with a side salad of your choice.
