    Prepare the Steak

    Season the NY Strip steak with salt and pepper. Heat a grill or skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

    Cook the Bacon

    In a skillet, cook the bacon slices over medium heat until crispy. Remove and place on paper towels to drain excess fat. Once cooled, chop into bite-sized pieces.

    Caramelize the Onions

    In the same skillet, add olive oil and sliced onions. Cook over low heat, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Prepare the Hard Boiled Eggs

    Place eggs in a pot of cold water, bring to a boil, then cover and let sit off heat for 12 minutes. Cool in ice water before peeling and slicing.

    In a large bowl, combine organic spinach and arugula. Top with sliced steak, tomato confit, blue cheese, hard boiled eggs, bacon, caramelized onions, and focaccia croutons.
