    Prepare the Choux Pastry

    In a saucepan, bring water, butter, and salt to a boil. Once boiling, remove from heat and stir in flour until a smooth dough forms. Let it cool slightly, then beat in eggs one at a time until mixture is smooth and glossy.

    Pipe and Bake

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Using a piping bag, pipe small mounds of choux pastry onto the baking sheet. Bake for 20-25 minutes or until golden brown and puffed up. Let them cool.

    Make the Chocolate Sauce

    In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add chopped semi-sweet chocolate. Stir until smooth and combined. Stir in vanilla extract and set aside.

    Assemble the Profiteroles

    Once the profiteroles are cool, cut a small slit in the side of each one. Fill with pistachio gelato using a spoon or piping bag. Drizzle with warm chocolate sauce before serving.
