Prepare Soup Base

Add Corn and Broth
Add the fresh corn kernels and vegetable broth to the pot. Season with salt and pepper. Bring to a boil and then reduce heat. Let it simmer for about 15 minutes.

Blend the Soup
Remove the pot from the heat and let it cool slightly. Using a blender, puree the soup until smooth. Stir in lime juice and adjust seasoning if necessary. Chill in the refrigerator for at least 1 hour.
Prepare Huitlacoche Crema

Blend Huitlacoche
In a blender, combine huitlacoche, sour cream, lime zest, and salt. Blend until smooth and creamy. Set aside.
Prepare Tortilla Crumble

Bake Tortillas
Preheat the oven to 350°F (175°C). Cut the corn tortillas into small pieces. Toss with olive oil and salt. Spread on a baking sheet and bake until crispy, about 10-12 minutes.
Assemble the Dish

Serve
Ladle the chilled corn soup into bowls. Drizzle with huitlacoche crema and top with crumbled tortillas and black garlic. Enjoy!
