Prepare the Crust
Preheat your oven to 375°F (190°C). Place the pie crust in a deep dish pie pan and bake it for 10 minutes until slightly golden. Remove from oven and set aside.

Mix the Filling
In a large bowl, whisk together the eggs, heavy cream, milk, salt, and black pepper until well combined. Stir in the sautéed vegetables, shredded cheese, and cooked bacon or ham if using.

Bake the Quiche
Pour the filling into the pre-baked pie crust. Bake in the preheated oven for 30-35 minutes or until the center is set and the top is lightly golden. Allow to cool for a few minutes before slicing.
