Pasty Preparation

    Make the Pastry

    In a large bowl, mix the flour and salt together. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and chill for at least 30 minutes.

    Prepare the Filling

    In a skillet, heat vegetable oil over medium heat. Add onions and cook until translucent. Add potatoes, carrots, and peas. Season with salt and pepper. Cook until vegetables are tender. For vegetarian pasties, use the vegetarian filling as an alternative.

    Assemble the Pasties

    Preheat the oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into circles (about 6 inches in diameter). Place a spoonful of filling on one half of each circle, fold over, and crimp edges to seal.

    Bake the Pasties

    Place the pasties on a baking sheet lined with parchment paper. Brush the tops with beaten egg. Bake for 25-30 minutes or until golden brown.

    Prepare the Salad

    While the pasties are baking, prepare a simple house salad with mixed greens, cherry tomatoes, cucumber, and your choice of dressing.

    Serve the pasties hot with the house salad on the side.
