Burger Preparation

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Shape the Beef Patty
Form the Niman Ranch beef into a 1/3 pound patty, making a slight indent in the center.

Cook the Beef Patty
In the same skillet used for bacon, cook the beef patty over medium-high heat for about 3-4 minutes on each side, or until desired doneness.

Melt the Cheese
During the last minute of cooking the beef patty, place the English stilton cheese on top to melt.

Toast the Brioche Bun
While the patty is cooking, toast the brioche bun in the skillet until golden brown.

Assemble the Burger
Spread mayonnaise on the bottom bun, add the romaine lettuce, followed by the beef patty with melted cheese, topped with bacon, tomato slice, and red onion. Place the top bun over the burger.

Serve the Kings Cross Burger with your choice of side.
