    Prepare the Potatoes

    Wash and scrub the Kennebec potatoes thoroughly. Slice them into thin, even chips using a sharp knife or mandoline.

    Soak the Chips

    Place the sliced potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

    Make the Ranch Dressing

    In a bowl, combine buttermilk, mayonnaise, sour cream, garlic powder, onion powder, dried dill, dried parsley, salt, and black pepper. Mix until smooth and refrigerate until ready to serve.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Chips

    Drain the soaked potato slices and pat them dry with a paper towel. Carefully add the potato slices to the hot oil in batches, frying until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

    Serve the Kennebec chips hot with the ranch dressing on the side.
