Scone Ingredients

Method

Scone Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

  3. 3

    Cut in the Butter

Add the cubed cold butter to the dry ingredients. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

  4. 4

    Add Olallieberries

Gently fold in the olallieberries, being careful not to crush them.

  5. 5

    Add Cream

Pour in the heavy cream and stir until just combined. Do not overmix.

  6. 6

    Shape the Scones

Turn the dough out onto a floured surface. Pat it into a 1-inch thick circle. Cut into small triangles or use a round cutter to make mini scones.

  7. 7

    Bake

Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.

  8. 8

    Serve

Let the scones cool slightly, then dust with powdered sugar. Serve warm with Devonshire cream.
