House-made Mini Scone Basket Recipe

    Preheat the Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt.

    Cut in Butter

    Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Olallieberries

    Gently fold in the olallieberries, being careful not to crush them.

    Combine Wet Ingredients

    In a separate bowl, whisk together the heavy cream, beaten egg, and vanilla extract.

    Combine Wet and Dry Mixtures

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

    Shape the Scones

    Turn the dough onto a floured surface and gently knead it a few times. Pat the dough into a 1-inch thick rectangle. Cut into 24 mini scones.

    Place the mini scones on the prepared baking sheet and bake for 15-18 minutes, or until golden brown.

    Once baked, allow the scones to cool slightly, then dust with powdered sugar before serving.
