Prepare the Potatoes
Peel and cut the kennebec potatoes into thick chips. Rinse with cold water to remove excess starch and dry them thoroughly with a clean kitchen towel.

Preheat the Oil
In a large pot or deep fryer, heat the oil to 350°F (175°C).

Make the Batter
In a mixing bowl, combine the flour, baking powder, salt, and pepper. Gradually whisk in the ale until the batter is smooth and thick.

Fry the Chips
Carefully add the chips to the hot oil in batches. Fry them for 4-5 minutes until golden brown and crispy. Remove and drain on paper towels.

Fry the Fish
Dip the cod fillets in the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for 5-7 minutes until golden brown and cooked through. Remove and drain on paper towels.

Serve
Serve the fish and chips hot with lemon wedges and tartar sauce on the side.
