Prepare the Corned Beef
If not using pre-cooked corned beef, roast the corned beef in the oven at 300°F (150°C) for about 3 hours or until tender. Let it rest before slicing thinly.
Caramelize the Onions
Slice the medium onion. In a skillet, melt 1 tablespoon of butter over medium heat and add the onions. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15 minutes.
Assemble the Sandwich
Spread a tablespoon of Thousand Island dressing on one side of each slice of rye bread. Layer the sliced corned beef, Swiss cheese, and caramelized onions on two slices of bread. Top with the remaining slices, dressing side down.
Grill the Sandwich
In the same skillet, melt the remaining tablespoon of butter over medium heat. Add the sandwiches and grill until golden brown and the cheese has melted, about 4-5 minutes per side.
Serve
Remove the sandwiches from the skillet, slice in half, and serve warm with additional Thousand Island dressing on the side.
