    Prepare the Ingredients

    Dice the red onion and bell peppers. Chop the smoked ham into small pieces.

    Whisk the Eggs

    In a large bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Cook the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced red onion and bell peppers. Sauté for about 5 minutes, or until they are tender.

    Add the Ham

    Add the chopped smoked ham to the skillet and cook for an additional 2-3 minutes until heated through.

    Combine with Eggs

    Pour the whisked eggs over the ham and vegetables in the skillet. Cook on medium-low heat, gently stirring until the eggs are set but still moist, about 5-7 minutes.
