Bread & Butter Pudding Bites
Method
Preparation
- 1
Prepare the Bread Pudding
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter. Cut the brioche or challah into bite-sized cubes and place them in the greased dish.
- 2
Mix the Custard
In a large bowl, whisk together the eggs, heavy cream, milk, granulated sugar, vanilla extract, and ground cinnamon until well combined.
- 3
Combine Bread and Custard
Pour the custard mixture evenly over the bread cubes, pressing down gently to ensure all pieces are soaked. Let it sit for about 15 minutes.
- 4
Bake
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pudding is set. Remove from the oven and let it cool slightly.
- 5
Make the Olallieberry Puree
In a small saucepan, add the olallieberries and a tablespoon of sugar. Cook over medium heat until the berries break down and become syrupy. Blend until smooth and strain if desired.
- 6
Prepare the Whiskey Caramel Sauce
In a saucepan over medium heat, combine brown sugar, butter, and whiskey. Stir until the sugar dissolves and the mixture comes to a boil. Let it boil for 3-4 minutes until it thickens slightly, then remove from heat.
- 7
Serve
Cut the bread pudding into bite-sized pieces, drizzle with olallieberry puree and whiskey caramel sauce before serving.
