    Inspect and purge

    Place the mussels in a large bowl or sink and rinse under cold running water. Discard any mussels with cracked shells or that remain open after a light tap (they should close).

    Soak and de-beard

    Fill a large bowl with cold water, add 1 tablespoon kosher salt and 2 cups of ice to make a cold brine. Submerge the mussels and let them sit 15–20 minutes so they purge sand. Using a small knife or your fingers, remove any beards by pulling toward the hinge. Rinse again under cold water and drain in a colander.

    Dry before cooking

    Pat the mussels dry with clean kitchen towels or paper towels. Let them sit for 5 minutes to air-dry slightly — dryness helps with a quick sear/roast effect in the hot oven.

Garlic Almond Butter

    Prepare butter base

    In a small saucepan over low heat, melt 6 tablespoons unsalted butter gently until foaming subsides but not browned. Remove from heat and allow to cool slightly (about 1 minute).

    Toast almonds

    In a small dry skillet over medium heat, toast 3 tablespoons chopped almonds 2–3 minutes, stirring frequently until fragrant and lightly golden. Remove from heat and let cool slightly. Reserve a tablespoon of toasted almonds for garnish if desired.

    Infuse butter

    Return the slightly cooled melted butter to very low heat. Add the 4 minced garlic cloves and gently cook 45–60 seconds just until fragrant (do not let garlic brown). Stir in the toasted almonds, 1 teaspoon smoked paprika, 1 teaspoon freshly ground black pepper, and 3 teaspoons sea salt. Remove from heat and stir in 1 teaspoon lemon zest, 1 tablespoon lemon juice, and 2 tablespoons chopped parsley. Taste and adjust seasoning; keep warm.

    Preheat wood oven and prepare vessel

    Preheat a wood-fired oven to a steady 500–700°F (260–370°C) interior flame zone — you want strong retained heat for quick roasting. If using a home oven with a pizza stone or broiler, preheat to highest temperature (500°F / 260°C) and position a cast-iron skillet or ovenproof pan in the oven to heat for 20–30 minutes.

    Combine mussels and liquids

    In a large ovenproof skillet or shallow roasting pan, drizzle 1 tablespoon extra-virgin olive oil and pour in 3 tablespoons dry vermouth. Arrange the cleaned, dried mussels in a single layer, hinge side down if possible, distributing them so they sit in a single even layer. Spoon a few tablespoons of the garlic almond butter over the mussels, leaving some butter aside for finishing.

    Roast in oven

    Place the pan into the hottest part of the preheated wood oven (or on the preheated skillet in your home oven). Roast for 4–6 minutes, watching closely: the shells should open and the butter should sizzle and begin to brown slightly. Carefully shake the pan once halfway through cooking to ensure even cooking. If using a broiler, broil 3–4 minutes until shells open and butter is bubbling.

    Finish and sauce

    Remove the pan from the oven. Immediately spoon the remaining garlic almond butter over the open mussels and drizzle an optional tablespoon of sherry or additional vermouth for brightness. Scatter the reserved toasted almond pieces and the 1/4 cup microgreens or extra parsley over the mussels. Squeeze lemon wedges over the top to taste.

    Serve

    Transfer the mussels to a warmed shallow bowl or serve straight from the skillet. Provide crusty bread or grilled sourdough to soak up the garlicky almond butter and vermouth sauce. Discard any mussels that did not open. Serve immediately.
