Clean
Rinse the oysters under cold running water and scrub the shells with a stiff brush to remove any dirt or barnacles. Discard any oysters with cracked shells or that do not close when tapped.

Chill platter
Pile crushed ice or rock salt on a serving platter to create a stable bed (about 1–2 cups). This keeps oysters level and cold while serving.

Shuck oysters
Working one at a time, hold an oyster cupped-side down in your gloved hand or on a folded towel. Insert the tip of an oyster knife into the hinge and twist gently until it pops. Slide the blade along the top shell to cut the adductor muscle and remove the top shell. Run the blade under the oyster to free it from the bottom shell, leaving the oyster sitting in the deeper half-shell with its liquor. Discard the top shell and check for shell fragments, removing any with the knife tip.

Nestle each shucked oyster into the ice bed so they sit level. Cover with additional crushed ice if needed to keep them cold and stable.
Seaweed Mignonette

Prepare seaweed: if using dried wakame, soak a small amount (about 1 tbsp dried) in warm water for 5–10 minutes, squeeze out excess water, then finely chop. Toast nori briefly over a low flame or in a dry skillet until fragrant, then crumble and finely chop or grind.

Combine vinegars and aromatics: in a small bowl, whisk together the red wine vinegar and champagne vinegar. Add the minced shallot and stir to combine. Let sit 5 minutes to mellow the shallot.

Finish: if desired, whisk in 1 teaspoon extra-virgin olive oil for a glossy mouthfeel. Cover and chill for at least 10 minutes to let flavors meld; the mignonette can be made up to 8 hours ahead and refrigerated.

Serve: place the chilled platter of oysters on the table with the seaweed mignonette in a small bowl or spooned into individual dipping spoons. Provide forks or small spoons and lemon halves. Guests can top each oyster with a little seaweed mignonette and a squeeze of lemon, or just enjoy plain to savor the oyster's liquor.

Garnish: tuck microgreens or small dill sprigs into the ice around the oysters for a visual finish, if desired.

Storage note: consume oysters the same day they are shucked. Discard any uneaten oysters after 2 hours at room temperature or 24 hours refrigerated in their shells.
