Base Preparation

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk until well blended.

In another bowl, beat the egg and then add the milk and melted butter. Mix until smooth.

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; the batter should be lumpy.

Sauté Vegetables

In a skillet over medium heat, add olive oil. Once hot, add the diced onion and bell peppers. Sauté for about 5 minutes or until the vegetables are softened.

Add Chicken and Seasoning

Add the shredded chicken, garlic powder, and black pepper to the skillet. Stir until the chicken is heated through, about 3-4 minutes.

Assembly and Cooking

Preheat Cooking Surface

Preheat a non-stick skillet or griddle over medium heat. Grease lightly if necessary.

Cook Bases

Pour about 1/4 cup of batter onto the skillet for each BYOM base. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2 minutes on the other side.

Assemble BYOM

Once the bases are cooked, place a generous amount of the chicken filling on one base, sprinkle with cheddar cheese, and top with another base to create a sandwich.

Serve hot with toppings of sour cream, sliced avocado, and chopped green onions.
