Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Fry them in batches until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt.

Drizzle the fries with truffle oil, sprinkle with grated Parmesan cheese, chopped parsley, and black pepper to taste. Serve immediately.
