Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into small chunks and boil in salted water until tender, about 15-20 minutes.

Mash and Mix
Drain the potatoes and mash them in a large bowl. Add cornstarch, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Form the Tots
Using your hands, shape the potato mixture into small cylinders or balls, about 1 inch in diameter.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Tater Tots
Carefully place the shaped tater tots in the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve
If desired, sprinkle with Parmesan cheese while hot. Serve warm with your favorite dipping sauce.
