Prepare the Steak
Season the flank steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side, or until it reaches your desired level of doneness. Remove from heat and let it rest for 5 minutes before slicing.

Prepare the Filling
In a bowl, mix the cream cheese and shredded cheddar cheese until well combined. Add the sliced steak to the cheese mixture and stir until evenly distributed.

Assemble the Rolls
Lay a spring roll wrapper on a clean surface. Place 2-3 tablespoons of the steak and cheese mixture in the center. Fold the sides over the filling and roll tightly from the bottom to the top. Repeat with the remaining wrappers and filling.

Cook the Rolls
In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Add the rolls, seam side down, and cook until golden brown and crispy, about 3-4 minutes per side.
