    Make the Pretzel Dough

    In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Add flour and salt, mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let it rise for 1 hour.

    Shape the Pretzels

    Preheat the oven to 450°F (230°C). Once dough has doubled, punch it down and divide into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel. Place on a baking sheet lined with parchment paper.

    Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds, then remove and place back on the baking sheet. Sprinkle with coarse sea salt.

    Bake the Pretzels

    Bake in the preheated oven for 12-15 minutes until golden brown. Remove and let cool slightly.

    Make the Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, stirring constantly until thickened. Add cheese and mustard powder, stirring until melted and smooth. Season with salt to taste.

    Serve warm pretzels with cheese sauce and German mustard on the side.
