    Cook the Brown Rice

    Rinse 1 cup of brown rice under cold water. In a pot, combine the rice with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender. Fluff with a fork and set aside.

    Prepare the Tuna

    Season the pan-seared tuna filet with salt and pepper. Heat a skillet over medium-high heat and sear the tuna for about 1-2 minutes on each side, depending on your preferred doneness. Remove from heat and let it rest.

    Slice the Vegetables

    Thinly slice the pickled carrots, onion, and avocado. Chop the scallions finely.

    Prepare the Wontons

    If using store-bought wontons, you can serve them as is or bake them according to package instructions until crispy.

    Assemble the Poke Bowl

    In a bowl, add a serving of brown rice as the base. Top with sliced pan-seared tuna, pickled carrots, onion, avocado, and scallions. Sprinkle sesame seeds on top and drizzle with ginger soy sauce.

    Add the crispy wontons on the side or crumbled on top of the poke bowl for added crunch. Enjoy your poke bowl!
