    Prepare the Sauerkraut

    In a medium saucepan, combine the sauerkraut and Guinness beer. Cook over medium heat for about 10 minutes, allowing the flavors to meld and the liquid to reduce slightly. Stir occasionally.

    Assemble the Sandwich

    Lay out four slices of rye bread. Spread a generous amount of Thousand Island dressing on each slice. Layer the corned beef evenly over the dressing, then add the beer-braised sauerkraut followed by slices of Swiss cheese.

    Grill the Sandwich

    Top with the remaining slices of rye bread. In a skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwiches in the skillet and grill until golden brown, about 3-4 minutes per side, adding more butter as needed.

    Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet. Cut in half and serve warm, with extra Thousand Island dressing on the side if desired.
