Prepare the Sauerkraut
In a medium saucepan, combine the sauerkraut and Guinness beer. Cook over medium heat for about 10 minutes, allowing the flavors to meld and the liquid to reduce slightly. Stir occasionally.

Assemble the Sandwich
Lay out four slices of rye bread. Spread a generous amount of Thousand Island dressing on each slice. Layer the corned beef evenly over the dressing, then add the beer-braised sauerkraut followed by slices of Swiss cheese.

Serve
Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet. Cut in half and serve warm, with extra Thousand Island dressing on the side if desired.
