    Prepare the Haddock

    Season the haddock fillets with salt and black pepper on both sides.

    Set up the Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, combine the cornmeal with a pinch of salt and pepper.

    Coat the Fish

    Dredge each haddock fillet in the flour, shaking off the excess. Dip into the beaten eggs, then coat with the cornmeal mixture, pressing gently to adhere.

    Fry the Fish

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded haddock fillets. Fry for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    On the bottom half of each burger bun, place a lettuce leaf, followed by a fried haddock fillet, a slice of American cheese, and a generous dollop of tartar sauce. Top with the other half of the bun.
