    Prepare the Base

    In a large pot, melt the butter over medium heat. Add the chopped onion and diced celery, and sauté until the vegetables are soft, about 5 minutes.

    Add Flour

    Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for an additional 2 minutes to eliminate the raw flour taste.

    Combine Liquids

    Gradually whisk in the milk and chicken broth, stirring constantly to avoid lumps. Bring the mixture to a gentle simmer.

    Add Potatoes and Clams

    Once the chowder base is simmering, add the diced potatoes, chopped clams, salt, black pepper, thyme, and bay leaf. Stir to combine.

    Simmer

    Reduce the heat to low and let the chowder simmer for about 20-25 minutes, or until the potatoes are tender.

    Serve

    Remove the bay leaf before serving. Ladle the chowder into bowls and enjoy hot.
