Preparation Instructions

  1. 1

    Prepare the Fries

Wash and peel the russet potatoes. Cut them into thick fries. Soak the fries in water for 30 minutes to remove excess starch, then drain and pat dry.

  2. 2

    Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and place on paper towels to drain excess oil. Season with salt.

  3. 3

    Heat the Gravy

In a saucepan, heat the beef or chicken gravy over medium heat until hot. Stir occasionally to prevent sticking.

  4. 4

    Assemble the Poutine

Place a generous portion of fries on a plate, top with cheese curds, and pour hot gravy over the top. Serve immediately.
