Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Season the Potatoes
In a large bowl, combine the olive oil, Cajun seasoning, salt, black pepper, garlic powder, and paprika. Add the dried potato strips and toss until evenly coated.

Bake the Fries
Preheat the oven to 425°F (220°C). Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes until crispy, flipping halfway through.

Once baked, remove from the oven and sprinkle with fresh parsley. Serve hot with your favorite dipping sauce.
