Poach the Shrimp
Bring a pot of salted water to a boil. Add the shrimp and poach for about 2-3 minutes until they turn pink and opaque. Remove from heat, drain, and let cool.

Prepare the Dressing
In a mixing bowl, combine the chopped scallions, diced celery, horseradish, and creole mustard. Mix well until combined.

Mix in the Parsley
Chop the fresh parsley and fold it into the dressing mixture.

Combine Shrimp and Dressing
Once the shrimp have cooled, chop them into bite-sized pieces and fold them into the dressing until well coated.

Plate the Dish
Serve the shrimp remoulade on a plate, garnished with additional parsley if desired.
