Brewing Instructions

Mashing
Heat 3 gallons of water to 165°F (74°C). Add the crushed pale malt, caramel malt, and flaked oats to the water and maintain the temperature at 152°F (67°C) for 60 minutes.

Sparging
After mashing, sparge the grains with an additional 3 gallons of water at 170°F (77°C). Collect the wort in a kettle.

Boiling
Bring the wort to a boil and add the Citra hops. Boil for 60 minutes, adding Simcoe hops at the 15-minute mark and Mosaic hops at the 5-minute mark.

Cooling and Fermentation
Cool the wort quickly to 70°F (21°C) and transfer it to a fermentation vessel. Pitch the yeast and seal the vessel.

Adding Fruits
After primary fermentation (about 7 days), add the frozen mixed berries, chopped kiwi, and grapefruit zest. Allow to ferment for an additional week.

Bottling
Once fermentation is complete, bottle the beer with priming sugar to carbonate and let it condition for 2 weeks before enjoying.
