Brewing Kombucha

    Prepare the Tea

    Boil the water in a pot. Once boiling, remove from heat and add the tea bags. Let steep for 15 minutes.

    Dissolve Sugar

    Remove tea bags and stir in the sugar until fully dissolved. Let the mixture cool to room temperature.

    Combine Ingredients

    In a clean glass jar, combine the cooled tea, SCOBY, and starter tea. Cover the jar with a breathable cloth secured with a rubber band.

    Fermentation

    Place the jar in a warm, dark place for 7 to 14 days, depending on desired fermentation level. Taste periodically.

Flavoring Kombucha

    Add Flavor

    Once fermentation is complete, remove the SCOBY and set it aside. Add maple syrup or blueberry puree to the kombucha and stir well.

    Second Fermentation

    Pour the flavored kombucha into bottles, leaving some space at the top. Seal the bottles and let them ferment at room temperature for another 3 to 7 days.

    Refrigerate

    Once carbonated to your liking, refrigerate the bottles to stop fermentation. Enjoy chilled!
