Brewing Process

    Mashing

    In a large pot, heat 5 liters of water to around 65°C (149°F). Add the Pilsner and Munich malts, stirring well to ensure all grains are soaked. Maintain this temperature for 60 minutes.

    Sparging

    After mashing, sparge the grains with hot water to collect the wort. Aim for about 4 liters of wort.

    Boiling

    Bring the collected wort to a boil. Add the Saaz hops and boil for 60 minutes. Add Hallertau hops in the last 15 minutes of the boil.

    Flavoring

    In the last 5 minutes of the boil, add dried lemon peel and fresh herbs to the wort.

    Cooling and Fermentation

    Cool the wort quickly to around 20°C (68°F) using a wort chiller. Transfer to a fermentation vessel and pitch the lager yeast. Ferment at 10°C (50°F) for 2-3 weeks.

    Bottling

    After fermentation, transfer the beer to a bottling bucket. Carbonate and bottle the beer, allowing it to condition for 2 weeks before enjoying.
