    Prepare the Shrimp

    In a bowl, soak the shrimp in buttermilk for about 30 minutes.

    Coat the Shrimp

    In a separate bowl, mix cornmeal, flour, cayenne pepper, salt, and black pepper. Remove shrimp from buttermilk, letting excess drip off, then coat in the cornmeal mixture.

    Fry the Shrimp

    In a deep fryer or large skillet, heat oil to 350°F (175°C). Fry the shrimp in batches until golden brown and cooked through, about 3-4 minutes. Drain on paper towels.

    Assemble the Po-Boy

    Slice the French bread lengthwise. Spread tartar sauce on both sides. Add fried shrimp, then top with shredded lettuce, sliced tomatoes, and pickles.

    Serve the shrimp po-boys with a side of french fries.
