Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in hot water until the batter is smooth. Fold in the crushed cookies.

Bake the Cakes
Divide the batter evenly between the two prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in pans for 10 minutes before transferring to a wire rack to cool completely.

Make the Frosting
In a large bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form.

Assemble the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of whipped cream frosting on top and sprinkle with crushed cookies. Place the second cake layer on top and frost the top and sides of the cake with the remaining whipped cream frosting. Decorate with additional crushed cookies if desired.
