Prepare the Shrimp
In a bowl, combine the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk. Dip each shrimp first in the egg mixture, then in the flour mixture, coating well.

Fry the Shrimp
Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the shrimp in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Assemble the Po-Boys
Slice the French bread loaves lengthwise. Spread a layer of go-go sauce on the bottom half of each loaf. Add a generous amount of fried shrimp, followed by grilled pineapple chunks, macadamia nuts, corn salsa, and shredded lettuce.
