Prep the Potatoes
Wash and peel the russet potatoes. Cut them into thin shoestring slices, about 1/8 inch thick.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Drain and Dry
Drain the soaked potatoes and pat them dry with a clean towel to remove excess moisture.

Fry the Potatoes
Carefully add the dried potatoes to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes.

Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, paprika, garlic powder, black pepper, oregano, and thyme.
