Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface and gently knead a few times. Roll out to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 15-20 minutes until golden brown.

Prepare the Sausage Gravy
In a large skillet over medium heat, cook the pork sausage, andouille sausage, and tasso until browned and cooked through. Sprinkle in 1 tablespoon of flour and stir to coat the meat. Gradually add milk, stirring continuously until the gravy thickens. Season with black pepper and salt to taste.

Assemble the Dish
Split the biscuits in half. Place the bottom half on a plate, top with a generous portion of sausage gravy, and place an egg on top. Serve with your choice of side.
